The last few weeks....

Last weekend was very busy for us.
(two weekends ago now
that I am finally finishing this post.)
It started on Thursday night 
when Caleb had his chorus concert.


On Friday Mom took the boys swimming
and they spent the night at her house.
It was their reward for Gabe doing
so good on the bus and
Caleb helping him.
Saturday Sam put siding on the porch
where we had enclosed it.




While Sam was finishing the siding
 I took the boys down to sit at the dock,
and of course Gabe had to get in the water.
He said it wasn't cold,
but I think it was.




Sunday we had breakfast at church, 
which everyone seemed to love.


We went to Logan's 
birthday party.
He turned 6.





There was a magician there and
 the boys got to go up and help him.


In the evening the boys went fishing.




Thursday night we had a work night at church
for the JR youth.
They mulched around the church.
They did a great job.
Then we had strawberries and ice cream for snack.
I brought a 5 quart pail of ice cream 
and a big bowl of strawberries and 
they got all.
My strawberries are doing really well this year.
I told Sam they need to be thinned out.
They are way to thick.
There is more than I know what to do with.


The boys are down to 8 days of school.
I'm not sure that they want it to over.
They are going to miss their teachers and friends.
They both had great teachers this year.




This weather is way too hot.
Hopefully it cools down and
we get some rain tonight.

These cinnamon rolls are wonderful.  I know I will be making them again.  Next time I will probably make them smaller.  They were almost too much all at once.  They were awesome!

Blessed....

Lately I have been feeling very blessed.
This school year was very different
than previous ones.
Gabe started going to kindergarten,
full day every day.
It was very quiet in the house.

I got involved in a prayer group called,
Moms in Prayer
(formerly known as Moms in Touch).
This group of Moms has
been a huge blessing to me!
I have grown so much.
Met new people.
Made new friends.
I used to be very uncomfortable,
praying out loud.
I still am to a certain degree.
But now I am getting more comfortable with it.
I guess I am afraid I will say something wrong,
I don't know.
The school year is coming to a close,
about four weeks of school left. 
I will miss this group this summer.

But I am ready for the boys to be done
with school.
We have lots of stuff planned,
two vacations,
lego night at our church,
vbs at our church
(we are heading it up with
another couple,
and our church hasn't had 
VBS for as long as we have been there).  


We are been very blessed this year, 
with the boys getting good
christian teachers.
I love their teachers!
They have been so good for the boys.
Gabe doesn't want school to be over,
because he is really going to miss his teacher.


Sometimes I feel frustrated that 
things don't happen like I want them too.
The weather for example has been
very frustrating lately.
It seems we can't have a happy medium anymore.
I have to remember that we are
blessed by lots of things in our lives,
our boys, family, friends, 
wonderful church family, ect..

Angel Food Cake...





Ingredients:



  • 1 cup sifted cake flour (if you don't have cake flour you can also use all-purpose flour, put 2 tablespoons of cornstarch in bottom of measuring cup and fill up with flour.  Sift 3 times)
  • 1-5/8 cup sugar, divided
  • 12 fresh egg whites (the fresher the eggs the better it will turn out)
  • 1-1/2 teaspoon cream of tarter
  • 1/4 teaspoon salt
  • 2 t vanilla


Directions:

  1. Preheat oven to 350 degrees.  Have a 10 by 4 tube pan ready. Do not grease.
  2. Sift flour and 3/4 cup sugar together 3 times.
  3. Separate eggs into a measuring up to make 1-1/2 cup. Let stand at room temp 15 minutes or longer.  Once the whites have came to room temperature, beat whites with cream of tarter and salt in mixing bowl or electric mixer until frothy.
  4. Beat in remaining sugar, 3/4 cup plus 2 tablespoons, a little at time, beating for 10 seconds after each addition using medium speed on mixer.  After the sugar is added beat on high until stiff peaks form.
  5. Fold in vanilla.  Gently add flour/sugar mixture a little at a time.  Don't mix too long or too fast.  When all is added pour into tube pan.  Bake until golden brown about 25-30 minutes.  Flip over after done baking.  Let cake cool in pan. Enjoy!

Chocolate Marshmallow Bars...




Ingredients:



  • 3/4 cup butter, softened
  • 1-1/2 cup sugar
  • 3 eggs
  • 1 teaspoon vanilla
  • 1-1/3 cup flour
  • 3 tablespoons cocoa
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 cups mini marshmallows
  • 1-1/3 cup milk chocolate chips
  • 1 cup peanut butter
  • 3 tablespoon butter
  • 2 cup rice krispy cereal


Directions:

  1. In a small bowl cream butter and sugar.  Add eggs and vanilla.  Combine flour, cocoa, baking powder, and salt in a separate bowl.  Add to the butter and sugar and mix.  Spread in a greased 15x10 baking pan.  Bake 15-18 minutes.
  2. Sprinkle marshmallows on top and bake for 2-3 minutes.  Using a knife dipped in water spread marshmallows.  Cool completely.
  3. For topping, combine in a small saucepan the chocolate chips, peanut butter, and butter.  Cook & stir over low heat until blended.  Remove from heat and stir in cereal.  Spread over bars and chill.  Enjoy.

Awana....

Wednesday was the closing
program for Awana's this year.
Caleb had a really fun year,
he did bible quizzing, 
Awana grand prix.  
He was really excited that he finished
his book this year.
He was so proud of his reward that he got!
We are proud of him too 
he did a great job this year!

but he was so proud of his
