Pumpkin Apple Streusel Muffins



Ingredients:

  • 2 -1/2 cups flour
  • 2 cups sugar
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs, slightly beaten
  • 1 cup pumpkin
  • 1/2 cup vegetable oil
  • 2 cups peeled finely chopped apples
  • 1 cup raisins

Streusel Topping:

  • 2 Tablespoons flour
  • 1/2 teaspoon cinnamon
  • 1/4 cup sugar
  • 4 teaspoons butter

Directions:

  1. In a large bowl, combine flour, sugar, pumpkin pie spice, baking soda, and salt; set aside.
  2. In a medium bowl, combine eggs, pumpkin, and oil.  Add to dry ingredients; stir until just moistened.
  3. Stir in apples and raisins.
  4. Spoon batter into greased or paper-lines muffin pans, filling 3/4 full.
  5. Mix topping ingredients in a small bowl.  Mix until crumbly.
  6. Sprinkle topping over batter.
  7. Bake at 350 degrees for 25-30 minutes or until toothpick comes out clean.
