Logan's Party

Sunday we went to our nephew
Logan's 5th birthday party.
(Sam had to stay home and work.)
The boys had a great time.
It was very HOT.
They had two ponys there
for pony rides.

The birthday boy getting a pony ride.

They also had a moon bouce.

Yesterday we were down at the pond
3 times.
The boys had so much fun.
The Harnish boys came over to
fish and swim.
The boys and I got alot of sun
in the last two days.
We had to get the aloe out last night.
Caleb really got burnt.

Our strawberries are producing
a lot this year.
Yesterday was my first big picking and
I got about 15 quarts!!
I think I am going to have to freeze a bunch this year
and make lots of jelly.

This Week

Last Saturday I went to a baby shower,
while waiting for the guest of honor
to arrive Grandma was feeding Bryce.

On Tuesday Mom & Dad took
Gabe to the Strasburg Railroad
for his birthday.
They got this picture,
which will be really neat for him to have.

On afternoon this week,
Gabe got the painting tape out
and wrapped some on his
arm, leg and toe.
Then he found some old inflations
and put them on his arms.
He walked around saying:
"strong man, strong man".

We also got our first strawberries.
YUMMY.

Lego Night

Last friday we had a lego night
at church.
When we started planning this,
we thought it would be good if
we could get 30 kids there.
We never imagined that
there would be around 70 kids.
We figured that there was
around 100 people there.
AMAZING.
God is good.
Everyone had such a great time.
Here are some pictures from
our VERY successful lego night.

The legos the kids got to choose from.
(they each got to take one home with them.)

Caleb & Seth pick out legos to build their creations

Cheese-Stuffed Shells

This week I found this recipe
And tried it out.
It was AWESOME.
I loved it and the boys loved it.
I didn't tell them they were eating spinach
or I know they wouldn't have ate it.
I always thought stuffed shells looked good,
but I HATE  ricotta cheese and
it was in all the recipes I ever saw.

Ingredients
  • 1 pound bulk sausage
  • 1 large onion, chopped
  • 1 package (10 oz) frozen chopped spinach, thawed and squeezed dry
  • 1 package cream cheese
  • 1 egg, lightly beaten
  • 2 cups mozzarella, divided
  • 2 cups cheddar cheese
  • 1 cup 4% cottage cheese
  • 1 cup grated parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 24 jumbo pasta shells, cooked and drained
  • 1 jar spaghetti sauce

Directions:
  1. In a large skillet, cook sausage and onion over medium heat ontil meat is no longer pink; drain.  Transfer to a large bowl. Stir in the spinach, cream cheese, and egg.  Add 1 cup mozzeralla cheese, cheddar cheese cottage cheese, parmesan cheese, salt, and pepper.
  2. Stuff pasta shells with sausage mixture. Arrange in baking dishes cated with cooking spray.  Spoon sauce over shells.
  3. Cover and bake at 350 degrees for 35-45 minutes. Uncover and add remaining mozzarella.  Bake 5-10 minutes longer or until bubbly and cheese is melted.  Let stand for 5 minutes before serving.

Last Day of Preschool

I can't believe that Gabe is finished
preschool tomorrow
where did the year go?
On Thursday when we left
and he was getting in the truck,
he said " I can't do this".
He is really going to miss Ms Wendy
she was a great teacher for him.
I finally convinced him that
he will probably see some of his friends
next year.
It is hard to believe that both my boys
will be in school next year,
they are growing up so fast.
Gabe learned so much this year.
He is looking forward to going to
kindergarten.
He thinks when he turns 5
he will start going,
but I told him he has to wait until
the end of August.  He doesn't believe me.

Mother's Day

This year for mothers day
we decided to do something
with our moms instead
of buying them a flower
or something.
On Saturday we took Sam's mom
to see Rio.
The boys LOVED the movie.
It was such a good kids movie.
For my mom we are going
miniture golfing,
Caleb has been asking to go for a little bit.
For Mother's Day
I got a picnic basket and
an iced tea maker.
On Mother's day we went
to Mom's for lunch,
and then took the boys fishing.
They LOVE to go down to our pond
and fish.
There were alot of fish swimming around.
We caught a few.

It was such a beautiful day
for Mother's Day.

Happy Mother's Day!!!
